schnitzel, rotkraut/sauerkraut, lyoner, leberwurst, schwarzwälder kirschtorte, bratwurst, kartoffelpüree, kartoffelpuffer, spätzle, klöße, geheiratete, rouladen, linsensuppe, berliner, donauwelle, schlupfnudeln, apfelkuchen, bockwurst, wiener würstchen, martinsgans, martinsbrezeln, schweinebraten.... etc
that is everything i can think of, but you have also take in mind that every "county" (bundesland) has its own traditional food and his own specific dialect, soooo in some parts of germany you eat more fish and crabs for example in hamburg or at the nordsea and in some parts you eat more sth like sauerkraut, kartoffelpuffer mit apfelmus, küchle (its like sugared mini apple pancakes)
and in conclusion: there's not ONE specific traditional german food (even when lots of foreigners tend to believe that), there are many and where you live in germany also influences you what you'd say is "traditional german"
